Solomons Bakery was founded in 1890 by Harris Hymes Solomon. Solomon began baking matzah for his local community following the closure of a matzah company in Melbourne. Due to increased demand, he opened his first shop in Newtown, becoming the first matzah producer in New South Wales.
Solomons Bakery sold an array of baked goods, and his company R. Solomon & Co. produced matzah at his factory during the Pesach season. The factory produced other goods including spices, sippets, horseradish, noodles, breadcrumbs, cake mixes, and dried fruit.
The company was owned and operated by three generations of the Solomon family before it was sold to the Saltoon family in 1977. In 2004 Matzah production ceased in Australia due to increasing production costs and Israeli competition.
