R. Solomon & Co. was founded in 1890 and has supplied "Solomon's Matzo" to Australian Jews ever since, selling 20 tons of matzo at its peak. However, in 2011 the Solomon's Matzo factory - located in Darlinghurst from 1927 and then Waterloo from 1956 - was forced to close due to increasing production costs and competition with Israeli-produced matzo. "Solomon's Matzo" will continue to appear on Australian shelves but will now be imported from Israel.
