    Two of the most important and solemn festivals are Rosh Hashanah (New Year) and Yom Kippur (Day of Atonement). Rosh Hashanah is understood as a ‘rebirth’ of the world and the self. On the eve of Rosh Hashanah, apples dipped in honey are symbolically eaten to sweeten the year ahead. The shofar (ram’s horn) calls the supplicants to prayer.
